Keto Ice Cream Bites Recipe

Who wants a super fun, super easy, super delicious summertime treat? I do, I do! You do too, I know it. I can feel it. It’s emanating right off of you, the desire for these Keto Ice Cream Bites. And really, who could blame you?

Not me! I’ve been obsessed with ice cream all summer long. Okay, let’s be honest here, I’ve been obsessed with ice cream my whole life. There is almost no dessert that can compare to the creamy rich frozen stuff.

But this summer, I’ve been having a ball coming up with fun and creative ice cream treats. Like my Neapolitan Ice Cream Cake, which is absolutely divine. Or my keto peach ice cream – yes, it really is keto!

Clearly I have ice cream on the brain. Mmmmmm, ice cream.

Get creative with keto ice cream!

You can always just grab yourself a pint of your favorite keto ice cream, or make one of my many, many low carb ice cream recipes, and eat it with a spoon. That’s totally legit and sometimes absolutely necessary.

But it’s also really fun to play with your food and use that basic ice cream to make another creative keto dessert. Cookies, cake, brownies, pie, and wee little ice cream truffles like these.

I used to feel jealous of regular food bloggers, who could use store-bought ice cream to create their elaborate frozen desserts. I always had to make my ice cream from scratch. But so much has changed in the keto world in the past few years, and we have so many more options than we used to.

It’s really a game changer, to be able to now purchase pre-made keto ice cream and really good sugar-free chocolate. I still love making my own ice cream and prefer it to anything store-bought but sometimes it’s really nice to have someone else do all the work.

And it makes things like these ice cream bites into a seriously easy keto dessert recipe.

How to make Chocolate Covered Ice Cream Bites

Use silicone molds: When I first decided to make these, I thought I would be able to take a small cookie scoop and simply scoop cute little round blobs of ice cream. But they wouldn’t really hold together very well so I had to rethink my approach.

Instead, I decided to pack the ice cream into small silicone molds. I used a mini muffin pan mold like this one but you could use almost any shape, as long as it provided shapes that are about 1 inch to 1 1/2 inches in diameter.

Any bigger and they will no longer be “bites”. Any smaller and you may have trouble packing the ice cream in and getting it out again once it’s frozen. This silicone bite-sized brownie pan would work well too.

Use your favorite keto ice cream: I used the coffee ice cream from Keto Pint, but any good keto-friendly ice cream should work. I was tempted to use their salted caramel but my family had already been into it and there wasn’t enough!

Rebel Creamery and Killer Creamery also have great flavors that would work well here. Strawberry would be delicious! So would butter pecan. You can also make your ice cream from scratch and use that. I have so many delicious keto ice cream recipes, the possibilities are virtually endless!

Soften the ice cream properly: Many store-bought keto ice creams are not scoopable straight out of the freezer so they need a bit of softening time first. Usually 15 to 30 minutes on the counter will suffice.

You may find the same thing of homemade ice cream recipes, since anything made with erythritol will freeze very hard. I have managed to overcome that with some recent ice cream recipes that use a combination of Swerve and Bocha Sweet, such as my Keto Vanilla Ice Cream and the ever so delicious no-churn Keto Maple Walnut Ice Cream.

Refreeze the ice cream: As long as the ice cream is soft but not melted, you can easily pack it into the silicone molds. Then you want to pop the whole mold in the freezer and freeze until they are rock solid. Depending on what ice cream you are using, this can take several hours.

Melt the chocolate with cocoa butter or coconut oil: You want your chocolate coating to be on the thin side, so that you can quickly dip the bites in without having them melt.

If you simply try to melt sugar-free chocolate on its own, it will be very thick and you won’t get a nice even coating. And your ice cream bites will begin to melt in the warm chocolate as you coat it.

Dip one at a time: Pop your ice cream bites out of the mold one a time, keeping the others in the freezer while you dip them. Work quickly dipping them and try to get them all back in the freezer as quickly as possible.

Freeze a cookie sheet: You don’t want your ice cream bites to start melting as you coat the others, so place them on a waxed paper lined cookie sheet that’s been in the freezer for a while, to help keep the bottoms cold. Then get it back into the freezer until they are firm.

Keto Ice Cream Bites

  1. Scoop small spoonfuls of the ice cream into the molds, packing it in to reduce holes and air bubbles. Freeze several hours until very firm. (How many you get will depend somewhat on the size of your silicone molds.

  2. Place a cookie sheet or a large platter in the freezer to chill about one hour before dipping the bites.

  3. In a heatproof bowl set over a pan of barely simmering water, melt the chocolate with the cocoa butter, stirring until smooth. Remove the bowl from over the pan and set on a kitchen towel (leaving it over the pan means it may stay warmer and your bites are more likely to melt).

  4. Remove the cookie sheet or platter from the freezer and cover with waxed paper.

  5. Working quickly, pop one bite out of the mold, leaving the rest in the freezer to stay cold. Dip quickly in the melted chocolate, using two forks to toss it and coat all over.

  6. Lift out with one fork and tap the fork firmly on the edge of the bowl to remove the excess chocolate, then place the chocolate covered bite on the cold tray to harden.

  7. Repeat with remaining ice cream bites. If at any time it seems like the covered bites are getting too soft, move them back into the freezer. You can keep another cookie sheet in the freezer for the finished bites.

  8. To store the bites, simply wait until they are all nicely frozen and transfer to an airtight container.
